Today we are sharing a few more of our ‘non sandwich’ lunchbox ideas along with a few recipes. We would also LOVE to hear from you and find out what your kids like to see in their lunch boxes!
Lemon & Chia Seed Cookies
We made these lemon & chia seed cookies earlier in the weekend and they were a big hit with my children AND my husband too! Chia seeds are high in antioxidants, iron, calcium, vitamin c, potassium and have a whole range of other health benefits. This recipe is also virtually sugar free except for the tablespoon of honey.
1 ¾ cup flour
½ cup butter (at room temperature)
½ teaspoon of baking powder
½ cup coconut sugar (you could use regular sugar if you wanted)
1 tablespoon honey
Juice + zest from 1 lemon
Two tablespoons of chia seeds
Pre-heat oven to 170 degrees
Beat the coconut sugar and butter until combined. Beat in the lemon zest + juice, honey and egg. Combine baking powder and flour and beat into the rest of the mixture until just combined. Knead dough on a floured surface, adding the chia seeds as you go. We used star cookie cutters to cut them out but we love these alphabet cookie stampers too.
Bake for 8-10 minutes and you are done!
