Blueberry and Lemon Muffin Recipe

We love sharing the odd recipe here on the Little Boo-Teek blog and today’s recipe is a favourite with my two kids (who are four and two).

These Blueberry & Lemon muffins are perfect for a school lunch box treat or just for a healthy morning tea at home. If you have kids who love to bake, it’s a relatively easy recipe with lots of ingredients to pour and stir!

Ingredients

2 ½ cups self-raising flour

½ cup coconut sugar (you could use castor sugar or brown sugar too)

½ cup melted butter

1 egg

½ cup of milk

Splash of vanilla essence

Juice + zest of one small lemon

Blueberries (we use fresh or frozen depending on what we have – measurements are a little off because my kids help with this part but I would guess about one cup of blueberries)

Method

Combine flour and sugar.

Whisk milk, butter, egg and vanilla essence and add to flour/sugar mixture.

Stir until just combined and add the zest, juice and blueberries

Extra: I usually stir in a tablespoon or so of chia seeds at this point for a little superfood boost. They don’t add any taste and my kids have actually started to call them ‘sprinkles’ and sometimes ask to sprinkle extra on top before baking!

Spoon into a greased muffin tray and bake for 25-30 minutes on 180 degrees

Makes 15 muffins (from memory!)
